Recipes - Tuna Tomato Melt

Preheat broiler or ready toaster oven

Medium mixing bowl
Baking sheet

Ingredients:
1 can tuna in water, drained
1 small onion, diced
Salt & pepper to taste
2 Tbsp mayonnaise
3-4 large tomatoes
1 tsp Old Bay, or your favorite spice blend
4 slices American cheese (or your favorite cheese of choice)

Directions:
In the medium mixing bowl, combine tuna, onion, salt, pepper, and mayo.
Stir until well blended.

Cut the tops off the tomatoes.
Scoop out the inside of the tomatoes (like a jack-o-lantern).
Place the tomatoes on the baking sheet, open end up.

Divide the tuna mix evenly among the tomatoes, filling each tomato with tuna.
Sprinkle top of tuna and tomato with Old Bay.
Lay a slice of cheese over the top of the filled tomato.

Place baking sheet under broiler.
Cook until cheese has melted, starts to bubble, and begins to brown.
Remove from broiler and serve.

Any tuna, shrimp, crab, or seafood salad may be used.
