Sweet Dumpling Squash with Citrus Herb Sauce

Preheat 350°F oven

Small saucepan
Baking sheet

Ingredients:
1 tbsp grated lemon rind
1 tbsp grated orange rind
1/2 cup water
1/4 cup fresh orange juice
1 1/2 tbsp sugar
1/4 tsp dried tarragon
1 tbs margarine/butter
1/8 tsp white pepper
3 (1 lb) sweet dumplings or other winter squash

Directions:
Combine first 7 ingredients in a small saucepan.
Bring to a boil
Reduce heat and simmer until reduced to 1/2 cup (about 10 min).
Remove from heat.
Stir in margarine and pepper.
Set aside and keep warm.

Cut squash lengthwise into quarters discarding seeds and stringy pulp.
Place squash, cut sides down, on a foil-lined baking sheet.
Bake at 350 for 30 minutes or until tender.
Remove from oven and cool slightly.

Scrape the inside of the squash with the tines of a fork to make channels.
Drizzle sauce over squash.

Garnish with additional tarragon if desired before serving.

Makes 6 servings
