Medium mixing bowl
Large bowl with tight lid
Dehydrator, OR baking sheet (preheat 150°F oven)
Ingredients:
2 lbs lean beef, sliced 1/4" thick, fat removed
1/4 cup soy sauce
2 Tbsp Worcester sauce
1 Tbsp brown sugar
1 tsp salt
1/2 tsp ground black pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground paprika
Directions:
In a medium mixing bowl, thoroughly combine soy, worcester, sugar, salt, pepper, garlic, onion, and paprika.
Lay meat strips in bottom of large bowl.
Pour sauce mix over meat strips.
Toss together until meat is thoroughly and evenly coated.
Snap lid onto bowl and refrigerate overnight or for at least 12 hours.
Toss frequently while marinating to ensure even coating.
Lay slices in a single layer in the dehydrator, OR
Lay slices in a single layer on baking sheet and place in warm oven with the door slightly open to allow moisture to escape.
Allow slices to dry until all moisture is gone and the slice cracks when bent but does not break.
Put slices into freezer bags, expelling all air.

Reconstituted meat cut into chunks make a quick soup or stew base. Place dehydrated meat into the bottom of a saucepan. Cover with water to 2 inches above the top of the meat. Bring to a boil and add your choice of add-ons. Simmer until meat chunks, vegetables, pasta and/or barley are tender.
Hamburger my be seasoned pressed and formed into sticks for a super-tender jerky.
We have stored them for more than a year in the freezer with no loss of quality or taste.
