Preheat 350°F oven
13" by 9" deep baking pan
Ingredients: Directions: Mix all spices together in a small bowl.Pour rice into bottom of baking pan. Pour oil and water over rice. Spread veggies on top of rice. Lay chicken on top of veggies. Shake spices over rice, veggies, and chicken. Place pan on center oven rack. Bake for approximately 1 hour or until all water is absorbed. Remove from oven and cool for 5-19 minutes. Serve. |
If swapping out frozen carrots for fresh, or any other harder vegetable, either cook them first or allow extra time in the oven until they're soft. A layer of cheese between the vegetables and the chicken makes a great addition! Spinach, kale, chard, tomatoes, onions, beans... any vegetable may be added to this recipe. Use the ones you like most or have leftover in the fridge! Try brown rice or wild rice instead of white rice! It's a great way to use up leftover holiday side dishes! Gravy or cream of mushroom soup (or celery or chicken or broccoli) makes a perfect topping over the chicken during the last 20 minutes of cooking. |
