4 cups potatoes, cubed
1/2 cup celery, chopped
1/4 cup green pepper, chopped
2 Tbsp onion, minced
1 tsp dried parsley flakes
1 tsp salt
1/2 tsp ground black pepper
1/3 cup melted butter OR 1/8 cup olive or grapeseed oil
In a small mixing bowl, thoroughly mix together parsley, salt and black pepper.
In a larger bowl, toss potatoes with butter or oil, celery, green pepper, and onion.
Toss everything together in a large mixing bowl until the potatoes are evenly coated with oil and spices.
Pour potatoes into shallow roasting pan and cover with foil, being sure to cut 5-6 vent holes into the foil.
Bake at 350F degrees for 45 minutes or until the potatoes are tender.
These potatoes go well as a side dish or can stand alone as a vegetarian meal or healthy snack.
