Recipes - Pork Breakfast Sausage

    Wax paper, cut into squares to fit patties
    Meat patty press
To make links
    Sausage casing
    Extruder attachment for meat grinder

Ingredients
2 lbs pork, cut up and ready for grinding
2 tsp dried ground sage
2 tsp salt
1 tsp ground black pepper
1/8 tsp ground red pepper
1 pinch ground cloves
1/4 tsp dried, ground marjoram
1 tsp brown sugar
1 1/2 tsp fennel seed
1 tsp anise seed

Directions:
In a small bowl blend together all spices until thoroughly mixed.
Pour 1/2 of spice mix over raw pork and mix thoroughly.
Run pork through the grinder and catch in large mixing bowl.
Blend remaining spices into ground pork.
Press into patties, lining both sides with wax paper squares,
    OR
Return pork to grinder, attach extruder end, thread casings onto nozzle, and fill casings to make links.

This pork breakfast sausage recipe may be made sweet or spicy, depending on your tastes. Both versions are included in the recipe below. Spicy breakfast sausage ingredients are marked in red. Sweet breakfast sausage ingredients are marked in blue.
