Recipes - Chard Tzatziki

Medium mixing bowl

Ingredients:
1 cup finely chopped, cooked, and drained chard (Chard prep page)
1 Tbsp olive or grapeseed oil
1 garlic clove, mashed
1/8 tsp salt
Dash Cayenne pepper
1 Tbsp lemon juice
1 cup plain yogurt

Directions:
Blend together garlic and oil until a paste forms.
Mix in salt, pepper, and lemon juice.
Add the yogurt, stirring until smooth.
Stir in the chard and mix until well-blended.

Cover and refrigerate for at least 1 hour before serving.

Serve in a bread bowl using a dark bread or toasted flat-bread.

Cucumbers may be used in place of the Swiss chard for a more authentic cucumber tzatziki taste.

Any greens may be used instead of the chard, including dandelion greens, spinach, or whatever is on hand and/or in season.
