Preheat 350°F oven

The breakfast bake casserole can be made the night before, covered, and stored in the refrigerator until morning, when it can then be cooked and served. This egg casserole is a great way to use up leftover, dry, stale bread and rolls! Saute onions, kale, chard, spinach, mushrooms, peppers, and other veggies to make your breakfast bake a gourmet treat. Layer cooked veggies on the cheese before pouring over the egg mix and baking for a hearty anytime meal. Crumble in cooked sausage, bacon, ham, or other meat with the bread to use leftovers and add a bold kick to your casserole. Sprinkle grated cheese blends on top of the casserole in the last 15 minutes of baking to a crisp, flavorful topping. Experiment with spices whipped into the egg mix, like curry powder, garlic and onion powder, dill, and Old Bay. |
